Eric C. Rossborough, 21

Eric Charles Rossborough, age 21, of Golden Valley, MN, died unexpectedly at home on Saturday, July 2, 2022.
Eric was born January 3, 2001 in Edina, MN to Bob Rossborough and Darcie Rossborough. He earned his high school diploma in 2019. He spent the last few years working at Davanni's in Golden Valley and had recently started working as a cook at the Bottle Rocket restaurant at the Minneapolis-St. Paul airport. He had many interests and ideas for the future. He loved dogs and aspired to someday work with animals or in a role that would support law enforcement.
Like so many young adults, he was just starting to come into his own. He loved playing Yugi-oh with his friends at local card shops and tournaments. He also spent a lot of time honing his online gaming skills – while making many friendships from all over the country. He enjoyed spending time with his family and relished winning at poker. He had the ability to light up any room with his smile and sense of humor. His laugh was contagious, his smile would draw you in, and before you realized it you were smiling and laughing right along with him. Eric was a very generous, kind and compassionate son, grandson, brother, nephew, cousin, friend and co-worker.
Eric was diagnosed with epilepsy at the age of 11. He lived and struggled with it - but didn't let it define him. Unfortunately it was a seizure that caused his death.
Eric was preceded in death by his grandparents, Randy and Sharon Nelson, John Rossborough, and our beloved family dog, Murphy.
He will be missed by his mother, Darcie Rossborough; father Bob Rossborough; brother Ryan Rossborough; grandmother Jan Rossborough; aunts and uncles Darin & Kristy Nelson, Matt & Melanie Brown, Anne-Marie Rossborough; cousins Cayli & Kate Nelson, Clara & Audrey Brown, and Alec & Evan Dahl, our dog Ralphie, extended family and many dear friends.
An open house to celebrate Eric's life will be held on Saturday, August 13, 2022, 2:00 PM – 4:00 PM at Darcie's home at 5915 Westmore Way, Golden Valley, MN. In lieu of flowers or gifts, memorials are preferred for the Epilepsy Foundation at www.epilepsy.com.
